Description

These are really delicious cookies. One of my dear recipes (Greek) gave me the recipe that her mom uses, and my family loved them. They come out fabulous, light and fluffy in the air fryer.

Ingredients

  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 cup room temperature butter
  • 1/8 cup powdered sugar
  • 1 egg yolk
  • 1 tablespoon Greek Brandy (any Brandy will do)
  • 1 teaspoon vanilla extract

Optional: Dust with powdered sugar and/or sliced almonds

    Instructions

    • In a large mixing bowl, mix together the flour, baking powder, butter, powdered sugar, egg yolk, brandy, and vanilla extract.
    • Mix well, being sure to scrape the sides down.
    • I use an ice cream scooper, to get my round cookies,
    • Spray your air fryer tray (see my blog post on how to bake cookies in a basket) with olive oil spray and then scoop the batter onto the pan (about 1 tablespoon)
    • Use a spoon to flatten the cookies.
    • Set the tray into the air fryer and set the temperature to 320 degrees F for 5 minutes.
    • Let cool, as they come out of the air fryer oven. I did two batches.  Then coat them with powdered sugar.
    • Plate, serve and enjoy!
