Air Fryer, Potato Croquettes

Description

These are so awesome. I made them in preparation for this year's Thanksgiving leftovers. This is going to be a huge hit at my house on Friday. I hope you and your family enjoy it!

Ingredients 

  • 1 package mashed potatoes (I used 24 ounces, leftovers work well)
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup Panko or breadcrumbs (I used panko)
  • 1 teaspoon diced parsley (optional)
  • olive oil spray

Instructions

  • As per the notes, I used prepared mashed potatoes, but leftover mashed potatoes work well as well. I used them from the refrigerator.
  • In one bowl, place the flour, salt, and pepper.
  • In another bowl place the egg/eggs (I started with one, and then needed another one)
  • Then in another bowl,  place the panko or breadcrumbs and the diced parsley
  • Make a ball with the mashed potatoes, and then dip it into the flour.
  • Then into the egg. Then into the panko.
  • As you make them place them on a greased tray or cookie sheet.
  • Place in the refrigerator for about an hour, then place in the air fryer basket or tray (greased) Spray generously with olive oil spray, set the temperate to 340 degrees F, for 9 minutes.
  • Check to make sure they are hot int he middle since all air fryers cook at different times. 
  • Plate, serve and enjoy!
