Air Fryer, Copycat Trader Joe's Pancake Bread Recipe!!

This is a great copycat recipe, of the famous Trader Joe's Pancake Bread, the maple syrup in the middle makes it so moist and delicious. This is definitely a winner.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup room temperature butter
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Topping:

  • 4 tablespoons sugar
  • 2 teaspoons flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Start by mixing the flour, baking soda, baking powder, salt together in a large mixing bowl.

  2. Then mix in the butter, sugar, eggs, maple syrup, sour cream, and vanilla extract.

  3. Then in a small bowl, mix together the topping ingredients.

  4. Prepare mini loaf pans, by spraying with either non-stick cooking spray or olive oil spray. (see my blog post for suggested ones) 

  5. Pour the batter into the pans, sprinkle the topping on top, and set in the air fryer oven, for 24 minutes at 320 degrees F. After 24 minutes check and see if the center is cooked, if it is removed it, if not add a couple of more minutes. If your bottom is not cooked, simply take the loaf out of the pan and flip it around (I didn't have this problem, but it's a common problem with some air fryers)

  6. Cool, before slicing.

  7. Plate, serve and enjoy!
