Ingredients 

For the Filling:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 teaspoon Salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 16 ounces refried beans, 16 oz

For Assembly:

  • 6-8 large flour tortillas
  • 1 cup cheddar cheese, shredded
  • 1 cup enchilada sauce

Optional toppings: diced onions, sliced olives, sour cream

    Instructions

    • In a skillet over medium heat, cook the ground beef, minced onion, and garlic until fully browned and cooked through. Drain any excess grease. Stir in the taco seasoning, Kosher salt, and black pepper, and set aside.
    • Warm the refried beans in a separate saucepan or microwave-safe bowl until they spread easily.
    • Preheat your air fryer to 350 degrees F (175°C) for 3-5 minutes.
    • Lay a flour tortilla on a flat surface and spread a layer of refried beans in the middle. Add a portion of the seasoned ground beef on top of the beans. Sprinkle some shredded cheese over the ground beef. Roll up the tortilla burrito-style, ensuring the ends are tucked in.
    • Place the enchiritos seam-side down in the air fryer basket. You may need to work in batches to avoid overcrowding. Set cook time for 5-7 minutes or until the tortillas are crispy and golden brown.
    • Carefully remove the enchiritos from the air fryer. Pour enchilada sauce over the top and sprinkle with additional cheese.
    • If desired, you can return the sauced enchiritos to the air fryer for 1-2 minutes to melt the cheese on top.
