Place the tortillas in the air fryer basket. Depending on the size of your air fryer, you may need to cook them one at a time. Cook for 2-3 minutes on each side or until crispy and golden. Remove and set aside to cool.
In a medium bowl, combine the minced sushi-grade salmon with 1 tablespoon of sliced scallions, toasted sesame oil, and soy sauce or tamari. Mix well to ensure the salmon is evenly coated.
Whisk together the mayonnaise and sriracha until smooth in a small bowl. Mix the mayo with the salmon mixture. Mash the avocado with a fork.
Spread a thin layer of mashed avocado over each crispy tortilla. Sprinkle a little kosher salt over the avocado.
Spoon the seasoned salmon mixture evenly over the avocado layer. Use the back of the spoon to press down and spread the salmon across the tortilla gently.
Sprinkle the remaining sliced scallions, black and white sesame seeds, and thin-sliced jalapeño over the top of each sushi pizza. Drizzle a little more sriracha mayo if desired.
