Ingredients 

  • 1/2 pound lean ground beef, 90% lean
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1-1/2 teaspoons shallot, chopped
  • 1 cup shiitake, sliced
  • 1 cup baby portobello, sliced
  • 1 cup white mushrooms, sliced
  • 1/4 cup dry red wine
  • 1 tablespoon fresh parsley, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 ounces wonton wrappers, 12 ounces wonton wrappers
  • 1 large egg
  • 1 tablespoon water

Instructions

  • Prepare the Filling: In a skillet, heat butter and olive oil over medium heat. Add minced garlic and chopped shallot, sautéing until fragrant. Stir in the chopped mushrooms and cook until softened. Add the lean ground beef, breaking it apart with a spatula and cook until browned. Deglaze the pan with dry red wine, then stir in minced parsley, salt, and pepper. Allow the mixture to cool slightly.
  • Assemble the Wontons: Lay out the wonton wrappers on a clean surface. Place a spoonful of the beef and mushroom mixture in the center of each wrapper. Brush the edges with egg wash (made by whisking together the egg and water), then fold the wrapper over the filling to form a triangle. Press the edges to seal, ensuring no filling leaks out.
  • Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for a few minutes.
  • Air Fry the Wontons: Lightly coat the air fryer basket with cooking spray. Arrange the filled wontons in a single layer in the basket, making sure they are not touching each other. Depending on the size of your air fryer, you may need to cook them in batches. Spray the tops of the wontons with a little more cooking spray.
  • Cook Until Golden: Air fry the wontons for about 6-8 minutes, or until they are golden brown and crispy. You may need to flip them halfway through cooking for even browning.
