Place the sausage patties in the air fryer basket in a single layer.
Air fry at 375°F (190°C) for 8 minutes, flipping halfway through or until fully cooked.
In a non-stick skillet, melt a small amount of butter or oil over medium heat.
Crack the eggs into the skillet. Season with salt and pepper.
Cook until the whites are set but the yolk is still slightly runny (or to your desired doneness). If you prefer a fully set yolk, you can flip the egg to cook both sides.
Slice the croissants in half.
Place them in the air fryer, cut side up, and toast at 350°F (175°C) for 2 minutes or until they're lightly golden.
Start with the bottom half of the toasted croissant.
Place a cheese slice, followed by the sausage patty.
Gently lay the cooked egg on top of the sausage.
Complete the sandwich with the top half of the croissant.
