Ingredients 

  • 2 cups old-fashioned rolled oats
  • 1/2 cup chopped nuts, e.g., almonds, pecans, or walnuts
  • 2 tablespoons seeds, e.g., chia, flaxseed, or pumpkin seeds
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1/2 cup dried fruit, e.g., cranberries, raisins, or apricots

Instructions

  • Preheat Your Air Fryer: Start by preheating your air fryer to 300°F (150°C). This will ensure even cooking.
  • In a large mixing bowl, combine the old-fashioned rolled oats, chopped nuts, and seeds. Mix them thoroughly to distribute the ingredients evenly.
  • In a separate microwave-safe bowl, combine the honey, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Microwave this mixture for about 20-30 seconds, or until it's warm and well combined.
  • Coat the Dry Ingredients: Pour the sweetened mixture over the dry ingredients in the large mixing bowl. Use a spatula or wooden spoon to thoroughly coat the oats, nuts, and seeds with the sweet mixture. Ensure that everything is evenly coated.
  • Transfer the coated granola mixture to the air fryer basket. Spread it out evenly to ensure even cooking.
  • Air fry at 300°F (150°C) for about 10-15 minutes, shaking the basket every 5 minutes to prevent clumping and ensure even browning.
  • Keep a close eye on the granola, as it can brown quickly. The granola is ready when it reaches your desired level of crispiness and turns a lovely golden color.
  • Once the granola is done, remove it from the air fryer and let it cool completely. It will continue to crisp up as it cools.
  • If you like, add dried fruit such as cranberries, raisins, or apricots to the cooled granola for extra sweetness and chewiness.
  • Transfer your homemade Vanilla Granola to an airtight container. It can be stored at room temperature for up to two weeks or longer in the refrigerator.
