In a large bowl, combine the ground meat, breadcrumbs, egg, soy sauce, green onions, garlic, and ginger. Mix well until all ingredients are evenly incorporated.
Shape the mixture into small, round meatballs. The size should be consistent for even cooking.
Preheat your air fryer to 400°F (200°C). This ensures a nice sear on the meatballs.
Place the meatballs in the air fryer basket, making sure they are not touching to allow proper air circulation. You may need to cook them in batches depending on the size of your air fryer.
Air fry for about 10-12 minutes, or until they are cooked through and have a nice brown color. Turn them halfway through the cooking time for even browning.
While the meatballs are cooking, prepare the teriyaki sauce. In a small saucepan, combine soy sauce, water, honey or brown sugar, and sesame oil. Bring to a simmer over medium heat.
Add the cornstarch slurry to the saucepan, stirring constantly until the sauce thickens.
Once the meatballs are cooked, toss them in the teriyaki sauce until they are well coated.
Serve the meatballs garnished with sesame seeds and chopped cilantro or parsley if desired. They are delicious over rice, with noodles, or as an appetizer.
