Ingredients 

  • 1 lb pork tenderloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1- inch ginger, grated
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup carrot, thinly sliced
  • 1/2 cup sweet onion, sliced
  • Green onions, or sesame seeds for garnish

Sauce:

  • 2 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 teaspoons water
  • 1 teaspoon cornstarch

Instructions

  • Start by cutting the pork tenderloin into thin slices or bite-sized pieces.
  • In a bowl, combine the pork with soy sauce, honey, minced garlic, and grated ginger. Let it marinate for at least 30 minutes to infuse the flavors.
  • While the pork is marinating, chop your vegetables. Slice bell peppers, broccoli, and carrots into bite-sized pieces. Keep them uniform in size for even cooking.
  • Preheat your air fryer to 380°F (190°C). This step ensures the pork and vegetables cook evenly.
  • After marinating, drain any excess marinade from the pork.
  • Toss the pork with a small amount of vegetable oil and a sprinkle of cornstarch. This helps to create a crispy coating.
  • Place the pork in the air fryer basket in a single layer. Cook for about 8-10 minutes, shaking the basket halfway through, until the pork is cooked through and slightly crispy.
  • In a separate bowl, toss the chopped vegetables with a bit of oil.
  • After removing the pork, put the vegetables in the air fryer basket. Cook for about 6-8 minutes, shaking the basket halfway through, until they are tender but still crisp.
  • While the vegetables are cooking, prepare a simple stir fry sauce. Mix soy sauce, honey, water or chicken broth, and cornstarch in a bowl.
  • Once the vegetables are done, add the cooked pork back to the air fryer along with the stir fry sauce.
  • Cook everything together for an additional 2-3 minutes to heat through and allow the sauce to thicken and coat the ingredients.
  • Serve your pork stir fry hot, garnished with chopped green onions and a drizzle of sesame oil.
  • This dish pairs wonderfully with steamed rice or noodles.
