Description

Air Fryer Chicken Fajita Rice Bowl is an easy recipe to make for dinner. It has all the flavors of your favorite chicken fajitas, including peppers, onions, sour cream, guacamole, pico de gallo, all served up on a bed of rice!

Ingredients 

chicken fajita rice bowl:

  • 1 lbs. chicken breast
  • 1-2 tsp taco seasoning*
  • 1 cup basmati rice, cooked
  • 2 red bell peppers
  • 1 yellow bell pepper
  • ¼ red onion
  • 1 can black beans
  • Pico de gallo*
  • Sour cream
  • Olive oil
  • 2 teaspoons taco seasoning, homemade or store bought

ingredients for pico de gallo

  • ½ beefsteak tomato
  • ¼ red onion
  • 1 tbsp cilantro
  • 1/2 lime, juiced
  • ½ tsp salt

ingredients for guacamole

  • 1 ripe avocado
  • ¼ red onion
  • ¼ beefsteak tomato
  • 1/2 lime, juiced
  • ½ tsp salt

Instructions

  • The first step is to prepare all your ingredients. In separate bowls, make the pico de gallo, prepare the guacamole (Feel free to use store-bought if you prefer) and drain and rinse your black beans.
  • Combine the diced chicken, bell peppers, red onions, olive oil, and taco seasoning in a large bowl. Toss well to coat.
  • Then place the chicken and vegetables into the air fryer basket or tray.
  • Set the temperature to 360 degrees F, air fryer setting, and cook for 10-15 minutes, shaking the basket during the cooking process.
  • Using the rice as a base, add the air-fried peppers and onions, chicken, pico de gallo, guacamole, black beans, and finish with sour cream. You can also add any additional toppings that you prefer.
  • Plate, serve, and enjoy!

Notes

Make Pico de Gallo: Dice the tomato and onion in equal sizes, adding seasonings and lime juice. Stir to combine.
How To Make Guacamole: First, dice the red onion and tomato into small pieces. Mash the Avocado with lime juice and salt. Use onion and tomato to sprinkle on top and then gently stir in.
