Pressure Cooker (Instant Pot) Sweet Bell Pepper Couscous (Fiesta)

Ingredients 

  • 1 tablespoon olive oil
  • 2 bay leaves (whole)
  • 1/2 cup diced onion
  • 1/2 cup red bell pepper
  • 1/2 cup orange bell pepper
  • 1/2 cup yellow bell pepper
  • 1 cup couscous
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions

  • Start by placing the olive oil into the Instant Pot Bowl.
  • Press the saute button. Allow the olive oil to heat up for about 30 seconds.
  • Place the bay leaves in the Instant  Pot bowl.
  • Then place the diced onions. Saute for about 2-3 minutes, just until the onions are softened.
  • Then add the diced peppers, saute for about 3-4 minutes, just until they are softened.
  • Then add the water and couscous and lemon juice. Mix well.
  • Set the manual high pressure for 2 minutes. 
  • Allow a natural release. Never force the lid off the Instant  Pot or any pressure cooker.  When the lid is easily removable. Remove the lid, and mix well.
  • Plate, serve and enjoy!
