Description

Cucumber Salad -- Cucumber salad is one of my favorite light summer meals. It's healthy, fresh, and delicious! Cucumbers are especially refreshing in the summertime when it's hot outside and you want to eat something that won't weigh you down. They're also very easy to prepare - just slice them up with some onions, salt, pepper, vinegar, and olive oil!

Ingredients 

  • 2 large English Cucumbers
  • 1/2 cup red onions, diced
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • 1 tablespoon mayo
  • 2 tablespoons dill
  • 2 tablespoons parsley
  • 1 teaspoon salt
  • 1 teaspoon garlic powder

Creamy Cucumber Salad Dressing:

  • 1/2 cup sour cream
  • 1 tablespoon white vinegar
  • 2 tablespoons dill
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder

Instructions

  • Start by slicing the cucumbers very thin.
  • Season the cucumbers with salt, then place them in a large bowl, wait about an hour. This will help draw out the water from the cucumber.
  • Drain the cucumber bowl. Place them onto a paper towel to drain the water.
  • Add the diced red onions, mix well.
  • In a small bowl, mix the dressing, add the apple cider vinegar, honey, olive oil., mayonnaise, dill, parsley, salt, and garlic powder.
  • Mix well, and then chill for about an hour before serving.
