Ingredients
1packagepie crust, refrigerated
2tablespoonsbutter
4cupsfresh spinach
1largeegg
1/2cupricotta cheese
1/4cupParmesan Cheese, grated
2tablespoonsbutter, for brushing
Instructions
Unroll your pie crust. Using a biscuit cutter, cut out circles large enough to fill (I used 1 1/2 inches).
In a small skillet, add the butter, and spinach, saute for a couple of minutes until the spinach is wilted. In a small bowl, mix the egg ricotta cheese, mix well, fold in the spinach mixture, and mix well.
Add about one tablespoon of spinach filling to the center of the pie dough. Fold the pie crust in half, and then use your fork's tine to seal. You can also get a small empanada maker to seal the edges.
Place the empanadas into the air fryer basket, brush them with melted butter. Set the temperature to 350 degrees F, air fryer setting, and air fry for 5 to 10 minutes. Flipping halfway during the cooking process.
