Yummy!! Pressure Cooker, Instant Pot, Quick, Easy and Tasty Penne a’ la Vodka

I have been busy this summer coming up with fast pasta dinners, that you can get in and out in a hurry, because if you are like me, once fall comes, I am ready to get outside. Whether it’s gardening or just taking a walk. I’m sure someone out there is like me, because I keep on finding myself eating more and more takeout, so today, I sat down and came up with a menu this week, that’s fast and healthy.
I am trying to come up with dinners that are:
- Nutritious
- I don’t have to go to 100 stores for ingredients.
- Everyone eats one meal (that’s a huge one in our house), because who likes cooking 4 meals, every night?
- Fast, fast and fast.
I grew up in an Italian household, we literally had pasta at every meal, whether it was the main course or just aside, we ate it every day. My mother and grandmother used to make it homemade, which is amazing, and I can literally still taste it in my mouth, It brings back amazing memories. Pasta is extremely quick and versatile, and to be honest, it comes out amazing in the Instant Pot (Pressure Cooker).

This is a really classic Italian pasta dish, Legend has it that this dish was created to sell more vodka, by a Roman vodka company, back in the 1980s, whether that is true, I do not know, but it makes a great story. This pasta dish is traditionally served with cream sauce, mixed with tomato or red sauce. The vodka actually helps keep the dish in check.
- 1 pound pasta, I used penne
- 28 ounces tomato puree
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 tablespoons minced garlic
- 1 teaspoon red pepper flakes more if you like a spicy pasta
- 1/2 cup vodka
- 1 teaspoon salt
- 2 cups water
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese

Start by placing the olive oil into the Instant Pot, press the saute button and let the Instant Pot, heat up for about 30 seconds, then pour the olive oil in.

Then place the diced onions into the Instant Pot, saute until they are translucent and softened about 2-3 minutes.

Mix in the vodka, allow it to simmer for about 2 minutes, evaporating slightly.

Then mix in the pasta, water, tomato puree, and salt. Then add the lid, turn the vent to seal and set your time for manual high pressure for 4 minutes. when the time is up, do a quick release (otherwise the pasta will get sticky)

I didn't have to drain the water, but if you have extra water, drain. Then mix in the cream, parsley, and grated cheese.
