Instant Pot Tomato Soup

There is nothing like a great homemade soup. I love making soups. I always have; they are the perfect comfort food. As soon as the weather turns fall-ish, I usually grab my Instant Pot and start making a new soup. Today’s is a classic, absolutely delish, and took less than 30 minutes from start to finish, Instant Pot Tomato Soup.

While, Tomato Soup might not be the most exciting soup, it’s a family favorite.

The ingredients are all traditionally classic, although today I used canned tomatoes, which ade teh soup a breeze to make. Paired dinner up with an air fryer grilled cheese sandwich. What is a better American meal than Tomato Soup and Grilled Cheese?

Instant Pot Tomato Soup

Ingredients Used:

  • 1/4 cup diced sweet onion
  • 1 tablespoon olive oil
  • 3 carrots, peeled and diced
  • 28 ounces Crushed Tomatoes
  • 1 cup Vegetable Broth
  • 1 tablespoon tomato paste
  • 2 tablespoon dried basil
  • 1 teaspoon dried oregano
  • Optional: Salt and Pepper to taste, fresh basil, and croutons for serving.

Simple Directions:

  1. Add the olive oil and diced onions to the Instant Pot bowl, and press the saute button. Saute for about 2-3 minutes, until the onions are softened.
  2. Add the carrots, vegetable broth, crushed tomatoes, tomato paste, dried basil and dried oregano. Mix well.
  3. Add your lid and set the manual high pressure for 15 minutes. Do a natural release.
  4. Using a handheld blender, blend the soup until smooth.
  5. Plate, serve, and enjoy!
