There is nothing like a great homemade soup. I love making soups. I always have; they are the perfect comfort food. As soon as the weather turns fall-ish, I usually grab my Instant Pot and start making a new soup. Today’s is a classic, absolutely delish, and took less than 30 minutes from start to finish, Instant Pot Tomato Soup.
While, Tomato Soup might not be the most exciting soup, it’s a family favorite.
The ingredients are all traditionally classic, although today I used canned tomatoes, which ade teh soup a breeze to make. Paired dinner up with an air fryer grilled cheese sandwich. What is a better American meal than Tomato Soup and Grilled Cheese?
Instant Pot Tomato Soup
Ingredients Used:
- 1/4 cup diced sweet onion
- 1 tablespoon olive oil
- 3 carrots, peeled and diced
- 28 ounces Crushed Tomatoes
- 1 cup Vegetable Broth
- 1 tablespoon tomato paste
- 2 tablespoon dried basil
- 1 teaspoon dried oregano
- Optional: Salt and Pepper to taste, fresh basil, and croutons for serving.
Simple Directions:
- Add the olive oil and diced onions to the Instant Pot bowl, and press the saute button. Saute for about 2-3 minutes, until the onions are softened.
- Add the carrots, vegetable broth, crushed tomatoes, tomato paste, dried basil and dried oregano. Mix well.
- Add your lid and set the manual high pressure for 15 minutes. Do a natural release.
- Using a handheld blender, blend the soup until smooth.
- Plate, serve, and enjoy!
