Instant Pot, Ham, Cheese and Egg Breakfast Burritos

My kids love to eat breakfast, I am not a breakfast eater, and I usually just stick with coffee. But we are a hockey family, and we have a LOT Of early morning practices and games, so I came up one day about bringing the Instant Pot and subsequently air fryer to our hockey tournaments. Hey, I’m not going to lie, eating every meal out is EXPENSIVE.

Here is my one of my family’s favorite recipes on the road, they are easily freezable.

Ingredients

  • 6 eggs
  • 3 tablespoons  heavy cream
  • 1/2 cup diced ham
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • salt & pepper to taste
  • Optional: flour tortillas

Instructions

  1. In a large bowl, add the eggs and heavy cream.
  2. Use a fork or whisker and beat the eggs until they are frothy.
  3. Then mix in the ham and cheese.
  4. Add the butter to the Instant Pot bowl.
  5. Press the saute button.
  6. Once the butter is melted, add the egg mixture. Continue to saute, and stir the eggs, until they are done about 3-5 minutes.
  7. Plate, serve, and enjoy!
