This recipe will show you how to make coconut Jasmine rice using an electric pressure cooker like the Instant Pot.

How To Make Instant Pot Coconut Jasmine Rice

Mix the rice, coconut milk, sugar, salt, and water in the Instant Pot bowl. Mix well.

Place the lid on top, and make sure it’s in the sealing position. Set manual high pressure for 3 minutes, then when the time is up, do a natural release. When all of the pressure in the Instant Pot is released, open the lid, and mix well.

HOW TO AVOID THE INSTANT POT BURN NOTICE WHEN MAKING RICE

I love this coconut rice recipe because it’s a one-pot meal. There is no need for extra dishes or pots, and you can have hot cooked fluffy grains in under 30 minutes! Plus, there are so many tasty options to customize your bowl with ingredients like curry paste, fish sauce (or soy sauce), green onions/scallions as well if desired – really whatever fills up that space inside of YOU!!!

This recipe will work in either a 3 quart, 6 quarts, or even the new Duo Evo Plus. The only reason you would get the burn notice is that something is sticking on the bottom of the Instant Pot. Mix well before each step, and you will not get the burn notice.

WHAT IS THE BEST COCONUT MILK?

The most confusing part of cooking is choosing the right ingredients. And when it comes to coconut milk, there are so many options out there that you might not know which one will work best for your recipe.

A couple of my favorites are Thai Kitchen Coconut Milk (Unsweetened) and Mooala Unsweetened Coconut Milk-Oat Milk.

WHAT IS THE BEST RICE FOR THIS DISH?

I always make this recipe with Jasmine rice because it’s my favorite. However, you can use long-grain brown or white rice and get great results without changing the cooking time!

If you do wish to use brown rice, you would need to increase the cooking time.

CAN I MAKE AHEAD AND REHEAT THE COCONUT RICE?

Coconut Rice is delicious and nutritious, but the real question on your mind might be whether or not it’ll last for more than 1 day. The answer: Yes! Coconut rice can easily stay fresh in an airtight container at room temperature (or fridge) for 3-5 days with no signs of spoilage or molding—it’s that good!

  • 1 1/2 cups Jasmine rice , (rinsed)
  • 13.5 ounces coconut milk
  • 1 cup water
  • 1 teaspoon granulated white sugar
  • 1/2 teaspoon kosher salt

Instructions

  • Mix the rice, coconut milk, sugar, salt, and water in the Instant Pot bowl. Mix well.
  • Place the lid on top, and make sure it’s in the sealing position. Set manual high pressure for 3 minutes, then when the time is up, do a natural release.
  • When all of the pressure in the Instant Pot is released, open the lid, and mix well.
  • Plate, serve, and enjoy!
