Instant Pot Burrito Bowls

Instant Pot Taco Bowls are amazing. My son really loves Chiptole, so this was my version of making the same dish in the Instant Pot. It was fast, easy, and absolutely delicious. 

If you are looking for a great and quick mid-week meal, this is my go-to, fast and easy. This entire dinner is cooked from start to finish within 20 minutes.

This is a complete dinner in one pot or one of my favorite Instant Pot one-pot meals.  It has protein which is the chicken and the black beans, and rice, for a side dish and you can garnish it with fresh vegetables. Truly amazing.

INSTANT POT CHICKEN TACO BOWLS

One of the quickest and easiest dinners you will ever make. And one of the best things is that it is so kid=friendly, your entire family will absolutely love it.

This would be an amazing dish to serve at get-together or parties since everyone can create their own dish. And it is healthy, what is not to love!!

HOW TO MAKE INSTANT POT CHICKEN TACO BOWLS:

  1. Place the butter into the Instant Pot.
  2. Press the saute button and heat up the butter, then add the onion and cook until it is soft and translucent.
  3. Add the garlic and the salt, mix well.
  4. Then add the diced chicken, black beans, rice, and salsa. Mix well
  5. Then pour chicken broth in.
  6. Lock the lid in place. Set a 10-minute cook time on high pressure.
  7. Once the cooking time completes, quickly release the pressure.
  8. Let it cool a bit, and then spoon into bowls, serve with your favorite toppings.

Some Common Questions Asked About Instant Pot Taco Bowls-

Can I switch out brown rice for the white rice?

Yes and No–While that would make for an incredibly healthy meal. You the cooking time would change, which might cause the boneless chicken breasts to dry out a bit. So, maybe cook your chicken on the stove or in the air fryer, and then mix it in at the end. =Brown rice takes about 22 minutes to fully cook.

What Are Some Toppings I Can Add To My Instant Pot Taco Bowls?

You can add anything you want to these taco bowls, here are some of my favorites:

  • Sour cream
  • Guacamole
  • Red onions
  • Tomatoes
  • Lettuce
  • Fresh cilantro
  • Black Beans
  • Shredded Cheese
  • Corn

Really you can use anything that you love in your favorite tacos! This is why this is an amazing and easy meal, which everyone will love!

Ingredients

  • 1 tablespoon of butter
  • 1 small onion, peeled and diced
  • 1 tablespoon of garlic (peeled and crushed)
  • 1 teaspoon of salt
  • 1 pound of boneless and skinless chicken breasts
  • 1 (15.5 ounce) can of black beans
  • 1 cup of uncooked rice
  • 1 cup salsa
  • 2 cups of chicken broth
  • Optional Garnishes: Fresh spices (cilantro and/or parsley), shredded cheddar cheese, sour cream, guacamole and another other toppings.

Instructions

  1. Place the butter into the Instant Pot.
  2. Press the saute button and head up the butter, then add the onion and cook until it is soft.
  3. Add the garlic and the salt, mix well.
  4. Then add the chicken, black beans, rice, and salsa. Mix well
  5. Then pour chicken broth in. .
  6. Lock the lid in place. Set a 10-minute cook time on high pressure.
  7. Once the cook time completes, quickly release the pressure.
  8. Let it cool a bit, and then spoon into bowls, serve with the garnishes (if you are serving them with it)
