Add olive oil, raw chicken, pepper, diced tomato, blackening seasoning, salt, and black pepper in a large skillet. Cook the chicken until fully cooked, about 6 to 8 minutes, stirring constantly. Remove when the internal temperature reaches 165 degrees F using a meat thermometer.

Step Three: Make the Creamy Sauce

Mix in the shredded cheese, cream cheese, and reserved water, and mix well.  Add the blackened chicken, diced tomatoes, and poblano peppers (cooked as directed below). If you want a creamier sauce, add a little heavy cream, and mix well. 

Step Four: Serving

Serve wtih additional jalapeno peppers, sliced green onions, fresh parsley, and freshly grated Parmesan Cheese.

  • 1/4 cup tomato, diced

  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup Monterey Jack Shredded Cheese
  • 8 tablespoons cream cheese
