A Plate of Air Fryer Zucchini Crisps are an amazing, low-carb, and KETO Friendly snack. I love fresh zucchini, and it crisps up so nicely in the air fryer.

My husband went the other day and picked up a package of Zucchini from Costco, and it was massive, so of course, I had to air fry some up. I made some Air Fryer Parmesan Zucchini Foil Packets and some Air Fryer Blueberry Zucchini Bread, both absolutely delicious.

While these are “fried,” they are such a healthy alternative to traditional fried foods since you use hardly any oil. A few sprays of oil, some seasoning I picked up at Aldi, and you are good to go. Air fry them up, put your cheese on top, melt it, and you are good to go, absolutely easy and absolutely delicious.

If you were wondering how an air fryer works with this recipe or any recipe, it works by circulating hot air around the basket, and the hot air magically cooks it up and crisps it up in the process. Amazing and Simple.

How To Make Air Fryer Air Fryer Zucchini Crisps

You need very few ingredients to make this recipe; they are zucchini, olive oil spray, garlic and parsley seasoning, and some mozzarella cheese.

Start by slicing the zucchini into 1/4 inch pieces.

Lay your cut zucchini slices onto the air fryer tray, and then spray your zucchini with cooking spray and shake some seasonings on it. I used this one I picked up at Aldi, but any combination of seasonings would work.

Set the tray into the air fryer and set the temperature to 370 degrees F, air fryer setting for 5-7 minutes. Then sprinkle some shredded mozzarella on top. Return to the air fryer for 1-2 minutes, just long enough for the cheese to melt.
