What Is Walnut Cake?

Walnut cake is a delicious dessert that was initially served in the United States during the holiday season. It has a unique taste and texture, making it one of the most popular cakes to serve at Thanksgiving or Christmas dinners. However, its history goes back much further than this!

Walnut cake is an exciting dessert that you can enjoy all year round for many different occasions. Its popularity stems from many aspects of its flavor profile – while traditional recipes call for chocolate chips or nuts, some variations include fruits like apples and cranberries and spices like cinnamon and gingerbread spice.

Today, I made this fantastic walnut cake in my air fryer and topped it off with my mother’s recipe for walnut buttercream frosting! Oh, so good!

  • Ground Walnuts
  • Caster Sugar
  • Eggs
  • Milk
  • Baking Powder
  • Vegetable Oil
  • Pure Vanilla Extract
  • Butter
  • Icing Sugar
  • Milk

How To Make Air Fryer Walnut Cake

Grease very well a 7-inch baking pan and line it with a circle of parchment paper. In a mixing bowl, whisk together the flour, sugar, and baking powder. Add the eggs and vanilla and stir gently. The mixture will be thick. Add also the oil and the milk and continue whisking until the mixture becomes smooth.

Add the walnuts and whisk gently to absorb. Don’t overmix! Pour the batter into the prepared pan. Place the pan into the basket of the air fryer. Bake the cake for about 40 minutes at 340º F or until a wooden skewer inserted in several places comes out clean. Check after at about 32-35 minutes and continue baking if it is not done yet.

Let the cake cool completely before assembling it. The frosting is optional: it is delicious also plain.

How To Frost and Assemble:

Beat the butter, walnuts, and icing sugar in a large bowl until fluffy using an electric mixer. Gradually add the milk and continue mixing at high speed until the frosting increases its volume a bit and becomes even fluffier – about 2-3 minutes.

Using a serrated knife, trim the top of the cake to make it even. You can use this part for decoration or eat it right away. 

Cut the cake horizontally into two layers. Place one on a serving plate and spread about ⅓ to ½ of the frosting on top. Place the second layer. Cover the cake all around with the remaining frosting.

Optionally preserve one tablespoon of the frosting and mix it with some of the trimmed part of the cake top, broken into crumbs. Make small balls out of the mixture: truffles that you can use for decoration.

What Is Caster Sugar? Is There A Substiute For Caster Sugar?

Caster sugar is a fine-grained white sugar that dissolves quickly and can be used in place of granulated, powdered, or brown sugars. Unlike other sugars, caster sugar has a delightful taste. It is a popular ingredient in baking because it gives cookies, cakes, and pies an airy texture without being too crunchy. There are many substitutes for caster sugar, but none have the same qualities as this type of sugar.

You can usually find this special sugar in the baking aisle at any American Grocery store, and you can also purchase it on Amazon.

Can I Make This A Dairy-Free Walnut Cake Recipe?

What Pan Can I Use For My Air Fryer?

While, I can tell you which pans work, for any air fryer. The speciaci pan that you are going If you own an air fryer, you may be wondering what type of pan to use. Pan choices for your air fryer can vary depending on the size and product that you are cooking.

For making a cake in the air fryer, the best pan is to use a thin cake pan, which will cause the middle to cook. A couple of my favorite options are:

WHAT KIND OF WALNUTS DID YOU USE?

I used Gourmet Ground Walnuts, which was available in my local grocery store. You can also make your ground walnuts but using whole, peeled walnuts and smashing them until they are ground, or put them in your food processor and process them until they are grounded.
