  • 1 cup poblano , peppers, diced
  • 2 cups black beans, drained and rinsed
  • 1/2 cup Pepper Jack Cheese, shredded
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 16 tortillas, flour or corn

Toppings: Shredded Cheese, Guacamole, Sour Cream, Diced Tomatoes, etc.
