The drying process concentrates the flavor of the tomatoes, giving them a rich, sweet, and slightly tart taste that is often described as “umami.” Sun-dried tomatoes are commonly used in Mediterranean cuisine and can be found in various forms, including whole, sliced, and chopped.

Pro Tips For Making Sundried Tomatoes In Air Fryer

  • Use Roma or plum tomatoes: These tomatoes are best for making sun-dried tomatoes because they have fewer seeds and less water content, making them easier to dry out.
  • Cut the tomatoes into even slices: This will help them cook and dry out more evenly. Depending on your preference, you can cut them into 1/4-inch or 1/2-inch slices.
  • Use a mandoline or a sharp knife: To ensure that your tomato slices are uniform in thickness, use a mandoline or a sharp knife to slice them. This will help them cook and dry out more evenly.
  • Season the tomatoes well: Sun-dried tomatoes are known for their rich, savory flavor, so make sure to season them generously with salt, oregano, garlic powder, and black pepper.
  • Add a little oil: While you don’t want to add too much oil, a little bit of extra-virgin olive oil will help the tomatoes dry out and become crispy in the air fryer.

Best Tomatoes To Dry In Air Fryer

Grape tomatoes, Heilumoum Tomatoes, Campari Tomatoes, Roma, or plum tomatoes are the best to dry in an air fryer. These tomatoes have a meatier texture and fewer seeds, making them ideal for drying. They also have a lower water content than other tomato varieties, which means they will dry out more easily in the air fryer.

Other tomato varieties may take longer to dry out and may not have the same texture as sun-dried tomatoes made with Roma or plum tomatoes. However, if you can’t find Roma or plum tomatoes, you can still use other varieties but remember that the drying time may vary.

Smaller tomatoes will take a shorter cooking time than larger tomatoes and large varieties.

How To Store

While I know many, you will think about the batch you bought in the grocery store, sitting in the pantry. I would strongly recommend placing them in an airtight container or glass jar or wrapping them together in aluminum foil. Place them in the refrigerator. Fill the container with olive oil, and keep the sun-dried tomatoes under the olive oil to not dry out.

They will last about a week in the refrigerator.

How To Freeze

The Freezer is an excellent way to store them if you want to make a HUGE batch during the summer.

Make them as directed in the recipe card, then prepare them for the freezer. Spread them over a baking sheet, and pop the baking sheet into the freezer. Remove them and place them into a freezer bag when they are individually frozen. They will last about 2 to three months in the freezer.
