What Is A Scallion Pancake?

Depending on where you live in the United States, they may be called different things; here in the Northeast, the restaurants refer to them as Scallion Pancakes. But other names that I have heard for the same dish are Green Onion Pancake or Spring Onion Pancake.

Whatever you call them, they are just a flatbread type that includes green onions or scallions. They are heavier in density than a regular pancake. Scallion Pancakes are usually fried, but we used the air fryer today and created a light and airy Chinese appetizer.

Ingredients Needed For Air Fryer Scallion Pancakes

The ingredients are pretty standard, whether you fry it up, either in the skillet or in the air fryer. Today’s components included a blend of flatbread dough, sliced scallions, and oil.

Today, we use a lot less oil than the frying version. You still get the same unique flavors with only a few tablespoons of oil!

  • Granulated Sugar
  • Salt
  • Water
  • Butter
  • Scallions
  • Olive Oil Spray

How To Make Air Fryer Scallion Pancakes

Air Fryer Scallion Pancakes

Start by making the dough:

Whisk together the flour, sugar, and salt in a large bowl. Slowly pour in hot water while using a fork to stir it in. Slowly pour them into the cool water next, still using the fork. You should have what appears to be a very shaggy dough. Using your hands, press the dough together until it starts to form a ball. On a clean work surface lightly dusted with flour, knead the dough for about 3 minutes until a smooth dough forms. Cover the dough and let rest for 30 minutes.

While the dough rests, make the filling by whisking together the melted butter, flour, and salt. Set aside.

Cut the dough into six pieces and roll them into a ball. Working with one dough ball at a time, keep the other dough balls covered with plastic wrap. On a lightly floured, clean work surface, roll out the dough into a roughly rectangular shape as thin as possible. Take one tablespoon of the filling and brush it over the dough, leaving a half-inch barrier. Sprinkle with 1/6 of the green onions.

With the long side facing you, roll the dough into a long thin log. Press the seams together on the sides and along the length of the log. Roll into a spiral shape, tucking the edge underneath. Place under the plastic wrap with the other dough balls and continue with the remaining dough.

Preheat your air fryer to 350 degrees F. Take one of the spirals and gently flatten it with the palm of your hand on your clean work surface. Roll it out into a 7 to 8-inch circle.

Spray the basket of the air fryer with olive oil spray. Place the pancake into the basket and spray the top with olive oil. Air fry for 5 minutes, flip, spray again and cook for an additional 5 minutes or until desired crispiness.

Repeat with the remaining dough, cut into triangles if desired, and serve with the dipping sauce of your choice.

How Do You Eat Scallion Pancakes?

They are typically cut into pizza wedges in Chinese restaurants, but you can certainly keep them whole.

Eat them hot. They are fabulous hot, just like fresh bread, coming out of the oven, they taste and smell amazing.

Traditionally this is served with either a sweet dipping sauce or a simple soy sauce. One of my favorite dipping sauces for either Scallion Pancakes or Gyoza is this from Dynasty (affiliate link).
