It is the time to eat healthily, and of course, that means with both my Air Fryer and my Instant Pot.
So, I started this morning, by drinking my coffee and playing with Brussels sprouts. And, I have to tell you, they make a very fine breakfast when they are air fried, especially when they are coated with maple syrup.
I used little ingredients, except for olive oil, because my youngest son is allergic to coconut oil, and seriously, I was hoping that you would try these.
My oldest son, Ethan loved them, unfortunately for my youngest son, they were gone and eaten by his older brother, by the time he awakened.
Brussel sprouts are one of the most overlooked vegetables in the supermarket aisle, they are basically little cabbages. They are usually available year-round.

Pans, I had a hard time finding pans that fit, but then one day, I ran around this amazing, which even includes a muffin tin, talk about a score!

This is a great roasting recipe, I used the Instant Pot Omni which has roasting features. The vegetables were awesome.
- 2 medium sweet potatoes
- 1 pound Brussels Sprouts
- 2-3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Start by washing and drying your sweet potato.
then cut the Sweet Potato into 1-inch pieces, try to get them uniform in size, so they cook at the same time.
Then cut your Brussels Sprouts in half, and then add them to a bowl with the cut sweet potatoes.
Add 2-3 tablespoons of olive oil, enough to coat the vegetables. Add, some salt and pepper.
Spead your vegetables on the air fryer tray.
Set the roasting function of the air fryer to 450 degrees F, for 10 minutes, after 10 minutes flip and roast your vegetables for another 10 minutes. As soon as the sweet potatoes are fork-tender remove.
Plate, serve and enjoy!
