  • Bay Leaves
  • Garlic
  • Olive Oil
  • Salt
  • Black Pepper
  • Bacon or Pancetta
  • Honey

How To Make Air Fryer Roasted Butternut Squash Hasselback with Bacon

Air Fryer Roasted Butternut Squash Hasselback with Bacon

Preheat the air fryer to 350 F | 180 C and place either a silicone air fryer liner or a piece of parchment paper (if you use parchment paper, wait until the air fryer is preheated to avoid a fire hazard) in the basket.

Cut the butternut squash in half lengthwise and scoop out the seeds with a metal spoon. Using a vegetable peeler, remove the skin. Place on a wooden cutting board and cut slices without cutting through with a sharp knife. Use the help of 2 wooden chopsticks placed on both sides of the squash to slice through.

Place bay leaves in between the slices. Place butternut squash in the air fryer basket with the whole garlic. Brush both with oil, then season with salt and pepper. Top with bacon or pancetta cubes.

Place in the air fryer and roast for about 20 minutes. Remove and drizzle honey on top. Roast for another 2 minutes.  Test with a skewer if it is entirely softened. If not, leave it a bit longer.

How To Store Leftovers

Allow to cool to room temperature, then store in an airtight container for up to 3 days.

Can I Freeze Leftovers

Place in a foil and store for up to 1 month. Be sure to label with recipe name and date not to forget. Defrost thoroughly before reheating.

How To Reheat

Reheat in the air fryer at a lower temperature. Heat until warm through.

  • 1 small butternut squash (about 700 g / 1.54 lbs)
  • 10-14 large bay leaves, 1
  • 1 whole garlic, cut the head and remove excess of skin
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup diced bacon or pancehetta
  • 3 tablespoons honey
