Air Fryer Raspberry Pie Bars are amazing! It’s one of the few things that I am amazed at, and I could bake in the Air Fryer. But they came out perfectly moist, tender, and delicious. If you love raspberries as much as my family, this is going to be one of your favorite summer air fryer recipes.

If you have never baked in the Air Fryer, let me tell you, it’s really easy. And the baked goods come out, almost as good as a bakery.

The key to Air Frying Baked Goods, pastries, cakes, cupcakes, etc., is to find a technique that works and then go with it. If you want to change this recipe out, it will also work with blueberries, blackberries, and strawberries.

  • All-Purpose Flour
  • Granulated Sugar
  • Baking Powder
  • Salt
  • Shortening
  • Eggs
  • Fresh or Frozen Raspberries
  • Cornstarch

How To Make Air Fryer Raspberry Pie Bars

Mix Flour, Baking Powder and Salt in Bowl

In a small bowl mix together the flour, sugar, baking powder, and salt. Then mix in the shortening, continue to mix, until it’s crumbly.

Add Eggs

Add the eggs.

Press the crumb layer on the bottom of a greased pan.

In a small bowl, mix the sugar, raspberries (either fresh or frozen), and cornstarch. Mix well, spread it out onto the crumble layer and then sprinkle the rest of the crumb topping on top of the raspberry filling.

Place the dessert into the air fryer, 320 degrees F, (air fryer setting) for the first 10 minutes and then another 10 minutes at 300 degrees F,

Other Topping Ideas:

This recipe is so versatile, and you can switch out any frozen or fresh fruit. I have made them with diced peaches, and apples. For both of those, you need to make an apple or peach pie filling first and then use it.

You can use either fresh or frozen strawberries, blackberries, or blueberries for other berries, and the recipe will work the same.

How To Store Air Fryer Raspberry Pie Bars

If you have any Air Fryer Raspberry Pie Bars left over, they are easy to store. Let them cool to room temperature, and then place them into an airtight container.

They will last for about 2 to 3 days at room temperature. It would be best to place them into the refrigerator for any longer, where they will last for about a week.

How To Freeze Air Fryer Raspberry Pie Bars

This is a great make-ahead dessert, which freezes easily. If you want to make a batch and freeze them, you can either freeze the pie bar whole or cut it into slices. I usually cut them into slices and freeze the bars to take a few out when I need a quick dessert or snack for the kids.

To Freeze: Cut up the pie bars and tightly wrap them in saran wrap and then into the foil. Place into the freezer. They will last about 2 to 3 months.

To Thaw: Remove the frozen bars from the freezer and let them thaw on the counter or place them into the refrigerator overnight.

The best pan to use is one that fits into the air fryer basket but leaves room on the sides for the pie bars to perfectly bake up.

Description

This is such an easy treat for the kids and family. They are great in the air fryer, as they really get really crisp but stay really moist in the center. Today, I used up a carton of fresh raspberries, but frozen raspberries would work as well.

Ingredients 

Crumb Bars:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup shortening
  • 2 large eggs

Raspberry Filling:

  • 1/2 cup granulated sugar
  • 4 cups raspberries, fresh or frozen
  • 1 tablespoon cornstarch

Instructions
