This Raspberry Lemon Bundt Cake is so moist and easy to make, which goes back to my old saying–You can make anything in the Air Fryer as long as you have the correct pan.

Today, I just dusted with a simple layer of powdered sugar, but you could add a great and easy icing to the cake if you wanted to. One of my favorite icings is by Martha Stewart, and it would go amazing on this cake. You can find the recipe here.

The Best Raspberry Lemon Bundt Cake Recipe

I love a great bundt cake for many reasons; first, I usually make these for my family on the weekend. And while I am busy cleaning the house, I can set the pan into the air fryer, set the temperature and time, and go about my day. I can come back and check to see if the cake is made or needs a few more minutes.

And it’s gorgeous. I have been purchasing a great deal of Bundt Cakes. I have been stocking up on bundt pans as I continue my air fryer journey. You can see the ones I have been suggesting here:

The other reason why I love a great air fryer bundt cake is that you do not have to worry about the middle cooking. Let me explain:

An air fryer works by the hot air circulating the pan. If you use too large of a pan, mostly it’s about thickness and size; the hot air will never get to the cake center. Causing the middle of the cake to be raw. The Bundt cake mold takes the middle of the cake, so you never have to worry about the middle being cooked. There is none.

Step One: Prepare The Cake Batter

In a large mixing bowl, cream together the butter and sugar. Mix in the eggs, vanilla extract, and yogurt. Add the cake flour, baking soda, baking powder, and salt. Mix well.

Fold in the raspberries and lemon zest. Spray your bundt pan with cooking spray. Pour the batter into the prepared pan.

Step Two: Air Fry Raspberry Lemon Bundt Cake

Set the pan into the air fryer and set the temperature to 330 degrees F for 20-25 minutes.

Ensure the cake is fully cooked; the exact time will depend on your air fryer and the pan you use. (Thicker pans will take longer to cook than thinner pans)

When the cake is cooled, dust it with powdered sugar.

Can I add different fruit? 

Are you looking to add different fruit besides blueberries? If so, reach for another type of berries, diced peaches, etc. You will find that swapping out the fruit will work nicely. Just swap the fruit with the same amount of fresh fruit you are using. 

Or, if you wanted, you could mix berries: some blueberries, diced strawberries, and even raspberries. Play around with the flavors and see what fits you best. 

Can I use frozen berries?

Fresh raspberries are always my first pick, but you can use frozen. The only thing about frozen berries is as soon as you pour them into your cake batter, they will leak off a red color. It can alter the whole color of your bundt cake. The flavor will be amazing; you will see a red tint and swirls in the batter. 

Frozen berries are always frozen at their prime. And it can be very affordable compared to buying fresh. So if you use frozen, don’t thaw and stir into the cake batter. Then move on to the next steps. 

How to store

So on this recipe, I always recommend refrigerating your leftover cake due to the fresh berries. I find it helps extend the shelf life of your cake. Otherwise, it will go bad sooner if left at room temperature. 

It is fine to serve it at room temperature. You don’t want the cake to sit out for more than a few hours, then eat it up. Otherwise, you will want to toss it in the fridge. 

Oven directions

Sometimes people get worried if a recipe will work or not. So if you doubt the air fryer, go right ahead with the oven. Preheat the oven to 350 F, then pour the cake mixture into the pie pan. 

Bake for around 30 minutes and check on the cake. If it is not done, then allow cooking longer. The way to know when your cake is made is by sticking a toothpick in the center and seeing if it comes out clean of wet batter. 

HOW TO SERVE UP THIS BUNDT CAKE 

  • Dust with powdered sugar 
  • Drizzle on a little caramel, chocolate, etc
  • Slice your cake and then pair it with a big scoop of ice cream. 
  • Fresh fruit to sprinkle on top.
