This will make a fantastic breakfast on the holiday mornings, whether it’s Thanksgiving, Christmas, or even New Year’s Day!

Air Fryer KETO Breakfast Casserole

This easy breakfast casserole recipe is perfect for when you’re in a hurry. It only takes minutes to throw together, so it’s the ideal dish that can be made ahead of time and still taste delicious at your desired serving temperature!

This is a recipe that I treasure because it has such rich and deep flavors. Not only does the dish taste delicious, but it’s also easy enough for me to make on my own during days when there aren’t as many hours left before guests arrive for a quick brunch!

Ingredients Needed For Air Fryer Low Carb Breakfast Casserole with Bacon Broccoli and Cheddar

  • Broccoli Florets
  • Shredded Cheddar Cheese
  • Bacon
  • Eggs
  • Milk
  • Onion Powder
  • Garlic Powder
  • Salt
  • Black Pepper

How To Make Air Fryer Low Carb Breakfast Casserole with Bacon Broccoli and Cheddar

Air Fryer Low Carb Breakfast Casserole with Bacon Broccoli and Cheddar

Spray an 8×8″ or another casserole dish that will fit n your air fryer with cooking spray and set aside. Place frozen broccoli in the microwave and steam according to package directions. Transfer steamed broccoli to a paper towel-lined plate to soak up excess moisture. Use a sharp knife to chop any larger pieces into bite-sized pieces. Set aside.

Cook bacon in a saute pan or the air fryer. Transfer cooked bacon to a paper-towel-lined plate to soak up excess grease. Crumble bacon and set aside. Add eggs, milk, and spices to a glass measuring cup or bowl. Whisk to combine.

Place steamed broccoli in the prepared casserole dish. Pour the egg mixture evenly over the top—layer on shredded cheese and crumbled bacon.

***If making this the night before, stop here and place it in the refrigerator. Continue the next steps in the morning. 

Place the casserole in the preheated air fryer, and bake at 350 degrees F, air fryer setting, for 18-23 minutes or until the egg is set and the top is a light golden brown. Remove from the oven and cool for 5-10 minutes before serving.

Can I Make This Breakfast Casserole Ahead Of Time?

Yes, you can make this breakfast casserole a day ahead! It’ll taste as good on the second go-around as it does when first baking. Or if freezing is more of your thing, wrap individual servings in aluminum foil with an ice cream stick for easy grab n’ go breakfasts later down the line!

It is common for casserole recipes to call for them to be baked in advance and frozen before baking. Make sure you wrap the dish tightly with aluminum foil and place it into the refrigerator.

To Freeze: you can freeze your favorite breakfast casserole to enjoy at a later time. Simply prepare the recipe and add it to a freezer-safe dish before covering well with plastic wrap, aluminum foil, or freezer wrap; then place in the freezer for 2-3 months.

When you’re ready to eat this tasty treat, again defrost in the refrigerator, overnight, until thawed, and then cook in the oven or air fryer.
