Ever since my Air Fryer Scrapple went live on my website, everyone has asked me about making Air Fryer Liverwurst or Air Fryer Livermush. And today, while I was at the grocery store, I grabbed a package and prepared it in the air fryer.

If you are not familiar with liverwurst, it is a meat sausage, and you will find the grocery aisle in it with the other processed meats.

While I was researching this, someone asked me if it was the same as livermush, a North Carolina delicacy. What I did find is that they are both essentially the same thing. They are both liver puddings, made from pork liver, head (cheek) pieces, and seasonings. Mush is the Carolina term for the same liverwurst.

Liverwurst like scrapple can be served on the side at breakfast, or it can be made into a sandwich, the most common being a liverwurst sandwich, which has onions, mustard, and cheese, usually served on rye bread.

It is similar to scrapple in how you prepare it, and the air fryer is excellent for scrapple, liverwurst, and livermush! All three are great in the air fryer.

Start by cutting the liverwurst into slices, about 1/2 inch thick. Then preheat your air fryer to 350 degrees F for 5 minutes, air fryer setting.

Set your liverwurst (livermush) into the air fryer, and set the timer to 5 minutes. Flip halfway during the cooking process.

What is it made of?

Liverwurst is made out of meat, organ meat, and fat. The meat can either be pork or beef. Of course, the organ is the liver, but some products will also include the heart or kidneys.

Livermush is made from almost the same ingredients as Scrapple, and it includes pork liver, cornmeal, and some seasonings (which will vary based on the manufacturer).

What does it taste like?

Livermush tastes like a sausage patty; the usual seasonings are sage and black pepper, so you can really taste many meat spices. Livermush is almost the same as Liver Pudding, but depending on where you live in the United States, the name will differ.

Liverwurst is a real blood sausage; it tastes almost like a pate. It definitely has the blood sausage taste.

How do you serve it?

The typical way to serve liverwurst is in a liverwurst sandwich, which can be served at breakfast or lunchtime.

It is typically eaten the same way that breakfast sausage is eaten, next to a great big pile of scrambled eggs.

Can you eat it raw?

Since the label (above) says that it is fully cooked, you can slice and eat it without cooking it.
