Today, we came home from the farmer’s market with a fresh batch of blueberries, and I wanted something great for dessert. I love the taste of blueberries and lemon, so I baked this dessert perfectly in the Air Fryer.

Bundt cakes are one of my favorites for baking in the air fryer since you do not have to worry about the middle cooking. Served with a simple glaze (recipe in directions below), they’re a perfect balance!

So, this recipe is excellent if you have never baked a cake in the Air Fryer. It’s moist, fluffy, filled with favors, and delicious! So good!

In a large mixing bowl, cream the sugar and butter together. Mix in the eggs.

Add the flour, baking soda, salt, and lemon zest and mix well. Then add the milk and lemon juice. Fold in the blueberries. Spray your bundt pan generously with olive oil. Pour the prepared batter into the prepared pan.

Set in the air fryer and set the temperature to 330 degrees F air fryer setting for 20-25 minutes. Check and make sure the cake is fully cooked. The exact time will depend on your air fryer and the pan you use. When the cake is cooled, drizzle on the icing.

Pro Tips

  • If the blueberries fall to the bottom of the batter, mix them with 1 to 2 tablespoons of all-purpose flour in a small bowl before adding them to the batter.
  • For best results, use room-temperature ingredients. The butter mixes better with the sugar when it’s not cold.
  • This recipe will work in any Air Fryer, including the Ninja Foodi, Instant Pot Vortex, Instant Pot Crisp Lid, Mealthy Lid, and all other air fryer baskets and oven models.
  • Use a mini Bundt Cake Pan for best results, which will fit almost any Air Fryer basket model.
  • You can use fresh or frozen blueberries. If you use frozen blueberries, do not thaw them before mixing them into the cake batter.

This is a great cake. You can serve it anytime, whether for breakfast, a snack, or a family dessert. It also pairs very well with a hot cup of coffee.

Serve with fresh fruit or whipped cream, or eat it as is! The lemon glaze on top adds many flavors and really needs nothing else to be served with.

How Long Does The Cake Last?

If you want to keep this cake as fresh as possible, tightly cover the cake with saran wrap, ensuring that the ends are not exposed to air as the air will slowly dry out the cake. Keep it at room temperature if consumed within 2 to 3 days. Place it into the refrigerator for any longer, lasting for about 3 to 4 days.

Description

This is such an easy cake to make in the air fryer. The blueberries give this cake a great flavor. I love blueberries in baked goods. I usually add a smear of cream cheese on top and pair it with a hot cup of coffee. This makes an excellent breakfast or dessert.

Ingredients 

Lemon Blueberry Bundt Pound Cake:

  • 1/2 cup butter, room temperature
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries

Icing:

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
