Today, I made a complete meal in the air fryer, all KETO friendly. The meal was a simple Pork Tenderloin with Fried Bell Peppers, Mushrooms, and Cabbage. All cooked in the air fryer.

Ingredient Used In This Recipe–
- 1 pound pork tenderloin
- 2 large red peppers, diced
- 10 ounces Cremini mushrooms, diced
- 1 pound cabbage, shredded
- 1/2 cup diced onion
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
Steps Needed To Make This Recipe–
- Start by dicing all of your vegetables up, and then toss them into an air fryer baking tray. Add about 2 tablespoons of olive oil.
- Set in the air fryer at 350 degrees F (air fryer setting) for 5 minutes, after 5 minutes, toss, then add another 5 minutes, mix in the sesame oil.
- Meanwhile, season your pork tenderloin, with salt, pepper and I used some cajun seasoning, but change it out for whatever you like.
- Set in your air fryer for 10 minutes at 350 degrees F (air fryer setting)
- The pork will be done, when it reaches an internal temperature of 145 degrees.
- Then serve, I put the vegetables down and cut some of the meat, and served it with some extra cajun seasoning.

This is a great and easy meal. I even roasted the vegetables in the air fryer, talk about a hands-off meal. The tenderloin comes out very tender in the air fryer, You can substitute any vegetables out for the stir-fry.
