  • All-purpose Flour: The foundation of your cake, all-purpose flour provides the essential structure, ensuring a tender yet sturdy crumb perfect for holding onto the rich spices and molasses.
  • Salt: A pinch of salt is crucial in balancing the sweetness, accentuating the flavors of the ginger and molasses, and enhancing the overall taste of the cake.
  • Baking Soda: This leavening agent is key to a light and airy texture, reacting with acidic components like molasses and buttermilk to give your gingerbread cake a nice rise.
  • Ground Ginger: The star spice of the recipe, ground ginger offers a warm, spicy kick, infusing the cake with that classic gingerbread flavor.
  • Molasses: Providing deep, caramelized sweetness and a moist texture, molasses is the heart of gingerbread’s distinct taste and rich, dark color.
  • Egg: The egg binds the ingredients together, contributing to the cake’s richness and helping to create a fine, smooth crumb.
  • Granulated Sugar: It adds sweetness and lightness to the cake, balancing the robust flavors of molasses and spices.
  • Buttermilk: Buttermilk lends a subtle tanginess and tenderizes the cake, interacting with baking soda for a perfect, soft texture. (If you don’t have buttermilk, you can easily make it by adding a tablespoon of lemon juice or vinegar to regular milk.)
  • Unsalted Butter: It provides moisture, richness, and flavor, ensuring that your gingerbread cake is deliciously tender and not too dry.

Just like any classical gingerbread cake, this recipe calls for buttermilk. The buttermilk creates a light and fluffy cake. If you do not have any on hand, do not fret; you can easily make yourself a batch.

Here is how to make a batch for this cake, which calls for one cup of buttermilk.

Add 1 cup of milk and one tablespoon of white vinegar. Mix well, and then let sit for about 5 minutes. This will allow the buttermilk to interact with the vinegar to help it turn into buttermilk.
