Air Fryer Homemade BBQ Potato Chips —I never thought I would be making homemade potato chips, but today, I found myself in the kitchen and decided to do it.

It does involve more time watching the air fryer than my other recipes, but the result is worth it.

I made two batches, one with a homemade BBQ seasoning rub that had sugar as an ingredient, and it didn’t do well, so I had a few extra potato slices left. I decided to use the prepared BBQ rub, which my family already loved, so the results were fantastic.

My only advice would be to flip them a lot and watch them because they can go from soft to burnt in minutes.

I used my mandoline slicer and sliced them ultra-thin. If you do have a mandoline, use a sharp knife. But remember to watch your hands.

Place the sliced potatoes into a large bowl. Cover the potatoes for about 20 minutes in cold water.

Then, I laid them out on my counter on a paper towel and covered them with a paper towel so they could dry off for about an hour.

I added the seasoning and olive oil to a small bowl and then dipped the potato chips in as I coated them. I placed them on a greased air fryer tray (if you don’t have an oven air fryer, spray your basket and lay them on top, but be careful not to crowd).

Set the temperature to 390 degrees F, air fryer setting, for 8 to 10 minutes, but during those 10 minutes, I want you to flip them several times so they don’t end up burnt. If you do not flip them, they will turn on you. Let cool. As they cool, they harden.

  • Use a Mandolin Slicer, which will slice your potatoes thin enough to crisp them up, but they will also be a uniform size and cook simultaneously.
  • This recipe will work in any Air Fryer Basket or Oven. The weight of the oil/seasoning will help the potatoes not fly around your basket. But if you have any issues, place a trivet onto the chips, as it will become a safety concern if they fly into the Air Fryer Heating Element.
  • For best results, soak your potatoes in cold water to help remove some starch and crispen them up.
  • But ensure you dry them off before trying to air fry them. I lay them on paper towels to get them as dry as possible.
