What are Gingerbread Cookies? In the Northeastern United States, people have been baking gingerbread cookies for centuries. They’re usually made with molasses and spices like cinnamon, cloves, allspice, and nutmeg.

Ginger is a key ingredient in these cookies, but it’s not the only one that gives them their distinctive flavor. Molasses makes them dark brown and spicy, while ground ginger provides heat to balance out the sweetness of sugar. Traditional recipes call for corn syrup or honey and eggs to bind everything together, so they don’t crumble on your hands when you eat them! The dough can be rolled into balls or flattened into shapes before baking until golden brown on top. Once cooled off completely, most cookie lovers decorate theirs!

How To Make Air Fryer Gingerbread Cookies

In a large mixing bowl, mix the butter, brown sugar, molasses, salt, cinnamon, ground ginger, ground allspice, egg, baking powder, baking soda, and flour mix well.

Place the dough in the refrigerator for about an hour until it’s cold. Then on a large counter or cutting board, add some flour, roll out the dough until it’s about 1/4 inch thick. Use flour on the rolling rin as well, since it will stick if you don’t. Then use your gingerbread cookies cutters to cut out the shapes.

As you make them place them into a greased air fryer basket or use parchment paper. (Or if you have an oven, place them on a greased air fryer tray) Set the temperature to 320 degrees F for 5 to 7 minutes.

Pro Tips:

  • This recipe will work in any Air Fryer Basket or Oven Model, including the Ninja Foodi, Instant Pot Vortex, Instant Pot Crisp Lid, Mealthy Lid, and other specialty models. The cooking time may vary.
  • Since every air fryer cooks slightly differently, it’s important to watch the cookies as they bake up. Remove them, went eh edges start to brown.
  • Let the cookies cool, before removing them from the air fryer basket or oven.
  • If you want a spicer cookie, add more ginger, to the recipe, about 1/2 teaspoon.
  • For this recipe, it’s best if you start with the chilled dough, so keep the dough in the refrigerator, in between the batch cooking.

HOW FAR IN ADVANCE CAN YOU MAKE THE DOUGH?

This is a great way to get a jump on your holiday baking since you can make and freeze the dough. For best results, wrap the dough in saran wrap a few times, and then wrap in foil. Place the dough into a freezer bag.

For best results, thaw the dough in the refrigerator overnight.

HOW CAN YOU MAKE THEM PUFF UP LESS?

This recipe will give you traditional Gingerbread Cookies with a slight puff, and if you want a crispier cookie, you can add about 1/4 a cup of cornstarch and reduce the baking powder and baking soda.

HOW SHOULD YOU STORE THESE?

Let the cookies cool to room temperature, and then place them into an airtight container for best results. They will last at room temperature for about 3 to 4 days.

CAN YOU FREEZE GINGERBREAD COOKIES?

Yes, I always make the dough and then freeze, until the kids and I are ready for some holiday baking. The dough will last for about three months.

You can also make and freeze the cooked (air-fried) Air Fryer Gingerbread Cookies. Let them cool to room temperature, and then place them on a greased baking sheet and pop into the freezer for best results. When the cookies are frozen solid, remove and put them into a freezer container.

Then when you are ready to decorate them, remove them and place them into the refrigerator until thawed.
