Air Fryer Cranberry and Walnut Bundt Cake is a great and easy breakfast recipe. It’s one of my favorites, and it’s light, tender, and fluffy. There is nothing better for breakfast than a piece of cake!

This cake is so good! You can either make it in a loaf pan or an in a bundt cake pan. I made it twice, once in both pans, and it was so good!

If you have not baked yet in the Air Fryer, it is so good, and the baked goods, cakes, cookies, muffins, etc.., come out as good as if you bought them in the bakery.

So, the next time you are craving a baked good, try the air fryer. It’s so good, and you will have a hard time believing that you made it! So good and easy!

  • Butter
  • Granulated Sugar
  • Eggs
  • All-Purpose Flour
  • Baking Powder
  • Diced Walnuts
  • Cranberries

How To Make Air Fryer Cranberry and Walnut Bundt Cake

Cream Butter and Sugar In Bowl

In a large mixing bowl, cream together the butter and sugar, fold in the eggs, mix well.

Mix in the flour and baking powder, mix well, mix in the diced walnuts and cranberries.

Spray your bundt pan, or loaf pan, generously with olive oil or cooking spray. Pour the prepared batter into the prepared pan.

Set in the air fryer and set the temperature to 330 degrees F, air fryer setting, for 20-25 minutes.

Check and make sure the cake is fully cooked. The exact time will depend on your air fryer and the pan you use.

PRO TIPS FOR MAKING THIS RECIPE

  • Start by creaming the butter and sugar, you will get a much fluffier cake than if you just add all of the ingredients into a bowl.
  • Make sure that you do not over mix your cake, otherwise you will end up with a dense cake.
  • You can either use fresh or dried cranberries, I made the cake using both and the results were about the same.
  • You can prepare this in either a loaf pan or Bundt Cake Pan. Whichever you choose, make sure to use mini loaf pans, which will allow for the cake to be fully cooked in the middle.
  • This recipe was used in a lot of different air fryer models, including the Ninja Foodi, Instant Pot Vortex and other Air Fryer Basket and Oven models. The recipe works about the same, the time will vary by a few minutes. Remember to keep on cooking until the cake is fully cooked.

How To Store Leftover Cake

Wrap the uneaten cake tightly with plastic wrap, then place the leftover cake into a resealable bag, and store it on the kitchen counter for about 3 to 4 days.

If you want to keep the cake longer, place it in the refrigerator. You can always reheat it up in the microwave or the air fryer.

How To Freeze A Cake

Let it cool to room temperature if you have any leftover Air Fryer Cranberry and Walnut Bundt Cake. This makes a great and quick, make-ahead breakfast recipe, so freezing it’s a great idea.

Let it cool to room temperature, place the cake in a layer of saran wrap, and then wrap the cake in foil. Place the wrapped cake into a freezer bag, and freeze for up to a month.

To use, place the frozen cake in the refrigerator or on the counter until thawed. You can also reheat in the microwave or air fryer before serving.

Dried or Fresh Cranberries

You can use either. I made this cake using one package of dried cranberries and another cake using fresh (thawed) cranberries. Both recipes will work the same.
