Air Fryer Coconut Shrimp is one of my favorite shrimp dishes. Prepared with a simple batter, it air fries so nicely.

If you have been looking for exciting ways to prepare shrimp, this is one of my favorites, and since you need very few ingredients, this is a perfect dinner for any midweek meal!

Shrimp in the air fryer is amazing! It’s a tender and delicious way to make shrimp And it is so fast and easy that Air Fryer Coconut Shrimp will be done in minutes! This dish is no different. With tender pieces of shrimp coated with flakes of coconut, it’s a great flavorful dish!

How To Make Air Fryer Coconut Shrimp

Air Fryer Coconut Shrimp Dredge Stations

If not already completed, peel and devein shrimp. Set up a dredging station for the shrimp. In a small bowl, mix coconut flour, sugar, and red pepper flakes. In a second bowl, lightly beat the eggs. Add coconut flakes to a third bowl.

 Dredge the shrimp in the flour, evenly coat the surface and shake off any excess. Then, dip the shrimp into the whisked eggs. Hold the shrimp over the egg bowl to allow any excess egg to drip off. Then, dredge the shrimp in coconut flakes. Lightly press the coconut flakes into the shrimp to help it stick better.

Place the shrimp in the air fryer and spray with canola oil or cooking spray. Do not stack the shrimp, and you may need to do a couple of batches depending on the size of your air fryer. Set the air fryer to 400* and cook for 5 minutes. Flip the shrimp over (carefully) and spray with canola oil—Cook for an additional 5 minutes.

Pro Tips:

  • This recipe will work in any air fryer, including both an oven and basket model. I have successfully made this in the Ninja Foodi, Instant Pot Vortex, GoWise, and other models. The recipe will work the same.
  • For best results, do not crowd the Air Fryer Basket. Otherwise, they will not crisp up.
  • If you want to really get a great crisp on the Air Fryer Coconut Shrimp, spray the shrimp’s coating with cooking spray.
  • This recipe will work with either fresh or frozen shrimp. For best results, let the shrimp thaw, so you can properly coat the shrimp.
  • This is a gluten-free recipe since I switched out the all-purpose flour for coconut flour, but you can easily change it back to all-purpose.

How long does this shrimp last?

This shrimp will last in the refrigerator in a covered container, for 2 to 3 days, after that it starts to become mushy.

You can reheat the Air Fryer Coconut Shrimp in the microwave or the Air Fryer. To reheat in the air fryer, place them into the basket, and reheat at 350 degrees F, air fryer setting, for 5 to 7 minutes.

Why air fry instead of deep fry?

Air frying is so much healthier than deep frying. Besides calories and fat intake that you will save without using oil for this dish.

It is a lot easier to Air Fry than Deep Fry. Since for deep frying, you have to wait for the oil to heat up and then use a thermometer to gauge it.

With the air fryer, you get the same deep-fried flavor without all of that! Healthy & Delicious!

How long does it take for shrimp to cook in an air fryer?

The average time will depend on what air fryer you are using and how large your shrimp are.

The average time for cooking shrimp will be about 9 to 12 minutes. Always check the internal temperature of the shrimp, which should read 145 degrees F, before removing them.

How To Store Air Fryer Coconut Shrimp

If you have any leftovers, let them cool to room temperature, and then place them into an airtight container. In the refrigerator, the shrimp should last between 2 to 4 days.

You can reheat them in the air fryer or microwave.

How To Freeze Air Fryer Coconut Shrimp

You can freeze these for a later time, and they freeze amazingly. To freeze, let them cool to room temperature and then place them on a parchment-lined baking sheet.

Then place the baking sheet into the freezer, and freeze until frozen solid. Remove and place into a freezer bag or freezer-safe container. They will last for about 2 to 3 months.

You can heat them in the Air Fryer, set the temperature to 400 degrees F, air fryer setting, and cook for 10 to 12 minutes.

  • 1 lb raw large shrimp
  • 1 cup coconut flour
  • 1 tsp sugar
  • 2 tsp red pepper flakes
  • 1 cup unsweetened coconut flakes

  • ¼ cup Sweet n sour sauce
