My family absolutely loves this, and we have been eating it for years and years. It is a classic recipe, and most people who grew up in the South, have always had it, it goes great with any meal. And it is really popular at Thanksgiving. This is a classic Air Fryer Cornbread Casserole.

It is a VERY easy recipe to make, in either an oven or an air fryer. I was making it for years, in my regular oven, the air fryer does an amazing job at cooking this to perfection.

Really really simple ingredients and most of them can be easily stored in your pantry, so you always have this side dish to go with any meal.

In a large mixing bowl mix together the honey, sugar, eggs, cream, and melted butter.

Add the creamed corn, drained whole corn, and Jiffy Mix and stir until fully combined.

Pour the mixture into the baking dish.Bake, at 320 degrees F, air fryer setting, with your pan covered in aluminum foil, in the air fryer for 50 to 55 minutes, or until the center is set with just a slight jiggle.

Recipe Notes:

This corn casserole is slightly sweet, creamy, and almost pudding-like in the center.

For less sweetness, reduce the honey and sugar in the recipe. Likewise, the sugar could be increased for a sweeter dish.

The corn casserole can be cooked the full time with aluminum foil covering it. It will become deep golden brown, even with foil over it.

Is corn casserole the same thing as corn pudding?

Corn casserole and corn pudding are two different dishes, but often they are mistaken for each other. So what’s the difference?

Corn casserole is usually a dish made with cornbread mix, while corn pudding is a dish typically made from scratch. Both dishes are delicious, but there’s no doubt that corn pudding takes the cake (or should we say casserole?) when it comes to taste. If you’ve never tried either one before, now is your chance!

Jiffy Corn Mix Substitute

Cornbread is a staple in many Southern homes, and for a good reason. It’s delicious! But if you’re looking for a gluten-free version or want to try something different, this Jiffy corn mix substitute is the perfect solution. It’s simple to make and tastes great!

  • 1/2 cup unbleached white all-purpose flour
  • 1/2 cup cornmeal
  • Two tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Two tablespoons vegetable oil

Variations:

Cheesy Air Fryer Corn Casserole: Add 1/2 cup of shredded cheddar cheese into the mixture.

Gluten-Free Air Fryer Corn Casserole: Make your own Jiffy Corn Mix Substitute, using gluten-free flour and cornmeal. Make sure the rest of your ingredients are gluten-free.

Less Sugar: Use less sugar. Although it will be less sweet, you can use a sugar substitute.

Keto and Low-Carb Friendly: Use Keto or low-carb replacements in this recipe, which will change the texture but still be delicious.

How To Double The Recipe:

You can easily double this recipe. Depending on how large your air fryer is, you will probably need to cook in batches.

Does Corn Casserole Need To Be Refrigerated?

  • 2 large eggs, room temperature
  • 14.75 ounces sweet corn, cream style
  • 15.25 ounces whole kernel corn, drained
  • 8.5 ounces Jiffy Cornbread Mix

Instructions

  • Mix together the honey, sugar, eggs, cream, and melted butter in a large mixing bowl.
  • Add the cream corn, drained whole corn, and Jiffy mix and stir until thoroughly combined
  • Pour the mixture into the baking dish.
