I love a great chicken dinner. It is one of the main reasons I started to use my air fryer every day. There is something about the simplicity of a perfectly roasted chicken breast.
Today, I served the roasted chicken breast over a bed of roasted arugula and tomatoes. It was a great and light lunch.
Air Fryer Chicken With Roasted Arugula And Tomatoes
Ingredients:
- 1cup grape tomatoes
- 1 cup arugula
- 2 tablespoons olive oil
- 2 boneless skinless chicken breasts, about 10 ounces each
- 1-2 teaspoons olive oil
- 2 tablespoons chicken rub (recipe here)
- salt
- pepper
Simple Chicken Directions:
- Start by seasoning your chicken breast with olive oil, then season them with the chicken rub, salt, and pepper.
- Set the chicken into the air fryer for about 8 minutes, flipping halfway at 370 degrees F, air fryer setting:
- Check the internal temperature before removing the chicken, it should be 165 degrees F.
- Serve over a plate of roasted arugula and tomatoes.
- Plate, serve, and enjoy!
Simple Roasted Arugula and Tomato Directions:
- Start by halving the tomatoes.
- In a small mixing bowl, mix the sliced tomatoes and the olive oil.
- Pour the coated tomatoes into a large skillet, saute for about 5-6 minutes. Then toss in the arugula, sauteing for a couple of minutes more.
- Remove from heat.
