Did you know you can cook carrots in your Air Fryer, or in your Air Fryer?
This is one of the easiest side dishes you will ever make, this is going to be a great time saver for either Thanksgiving or Christmas dinner! This will also leave the stove open for more important dishes, and it will provide such easy cleanup.
Carrot is one of the most versatile root vegetables, they come in a variety of colors, the most common being orange. Around Thanksgiving time, they sell different colors, which help dress up the table, they come in a variety of colors, see if you can find them at your local farmer’s market or grocery store.

Carrots were originally found in Persia (Thank you Wikipedia) and originally they were eaten for their leaves and seeds. I am thinking about Carrot Salad, has anyone had that? I will have to put that on my list of things to make, although I don’t think I would need an air fryer or Instant Pot for that. I will post that recipe when I make it. What I found interesting from reading about carrots on Wikipedia is that every region or country has their own way of eating carrots. I will have to put them on my list of future recipes.
Now, the baby carrot industry was one of the best things that happened to carrots, who doesn’t love buying a bag of carrots and just throwing them into the Instant Pot or Air Fryer. Talk about a healthy and convenient recipe.
This carrot recipe can be made in a few minutes, it’s a simple recipe that goes with any meal. My kids love them and would eat them all the time, they have the right flavor balance, not too sweet, not sour.

Air Fryer, Balsamic Honey Glazed Rainbow Carrots
This is a really easy side dish. I got a great deal at Trader Joe’s on already peeled carrots, with all of the colors of the rainbow. This can be really easily changed up, by adding some potatoes, for a quick side dish of air fryer carrots and potatoes. This is a great alternative to the traditional air fryer carrots with brown sugar.

Ingredients
- 1 pound carrots, rainbow colors
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- These are the carrots, I found at Trader Joes, and are using in this recipe.
- Cut the carrots in half horizontally, as I cut them, I added them to a large mixing bowl.
- Then pour int the olive oil, balsamic vinegar, honey, salt, and pepper. Use your hands to mix well.
- Pour the coated carrots into the air fryer basket or tray.
- Set the temperature to 400 degrees F, for 5 minutes, after 5 minutes flip the carrots and air fry for another 5 minutes.
- Plate, serve and enjoy!
