Hasselback potatoes are a potato dish where the potatoes are sliced to create slots in the middle. The slices are then baked with butter, salt, and pepper until they turn crispy outside while remaining soft on the inside.

The Hasselback method is said to have originated from Sweden during World War II, when people were short of supplies and had to use whatever they could find in their pantries for meals.

Making Air Fryer Hasselbacks

Air Fryer Hasselback Bacon and Bleu Cheese Potatoes

Wash and dry potatoes. Combine salt, pepper, and thyme in a small ramekin. Brush potatoes with olive oil, then evenly sprinkle with seasoning.

Prepare the creamy bleu cheese topping. Combine bleu cheese, heavy cream, minced garlic, and bacon bits in a small mixing bowl. Whisk until smooth.

Slice bleu cheese thin, about ⅛ “ Use a Hasselback slicing rack to slice potatoes thinly. If you do not have one, simply place the potato between two wooden spoons and cut ¼” slices into the potato using the spoons as a stopping point. You do not want to slice all the way through.

Preheat the air fryer to 350 degrees F, air fryer setting, for 5 minutes. Combine melted butter, thyme, and peppercorn in a ramekin or small bowl—brush butter over and into the potatoes. Place a slice of bleu cheese between each potato fold. 

Place potatoes into the air fryer basket and cook for 20 minutes. Brush the tops of the potatoes with the melted butter again, and cook for 7 more minutes. 

Top potatoes with a dollop of the creamy bleu cheese mixture and top with chopped chives. Enjoy!

How to Cut the Perfect Hasselback Potatoes

Chopping up potatoes for a classic Hasselback dish can be tricky, but our recent discovery makes it easy to cut the perfect-sized slices every time. There are four ways to cut your potatoes perfectly.

  • Knife: With a very sharp knife. The key is to make sure that you do not cut down. You want to make sure that your potato is still intact when you are done.
  • Hasselback Cutter: This is my favorite tool, and if you’re going to make a lot of them, I would highly suggest that you purchase one. You can either buy one on Amazon or at your local specialty kitchen shop.
  • Chopsticks: This is a great video that shows you how to perfectly cut the potatoes using chopsticks.
  • Spoons: This is the method I used today; place the potato between two wooden spoons and cut ¼” slices into the potato using the spoons as a stopping point. You do not want to slice all the way through.

What Type of Potatoes To Use For Hasselback Potatoes

The type of potatoes you use for your Hasselback Potatoes will depend on the flavor and texture you are looking to achieve.

To make these potatoes flavorful, go with a starchy potato-like Russet or Yukon Gold. For a creamy texture, try using Red Bliss Potatoes. And if you want to mix it up and get some more color in your dish, use Purple Potato!

Should I Peel My Potatoes For Hasselback Potatoes?

It’s a question every cook asks at one time or another- should I peel my potatoes before making Hasselback potatoes? The answer is no, and it may seem counterintuitive, but the peels help make this dish spectacular.

You end up with a potato that is crispy on the outside (Thanks to the air fryer), so save your time and keep the peel on.

  • 1 cup crumbled bleu cheese
  • 1/4 cup heavy cream

  • 1/2 cup bacon bits
  • 4 ounces brick bleu cheese, thinly sliced
  • 4 tablespoons  salted butter

  • 1/4 cup chives, chopped
