Ingredients Needed For Air Fryer Cranberry Muffins

Ingredients Needed For Air Fryer Cranberry Muffins

  • All-purpose flour: or use gluten-free all-purpose flour, if you want to cook this recipe gluten-free. 
  • Granulated sugar: You can use a sugar substitute if you want to make this low-sugar (or diabetic-friendly)
  • Baking Powder & Baking Soda: Use fresh products!
  • Seasonings & Spices: Ground Nutmeg, Ground Cinnamon, Ground Ginger, and Salt.
  • Orange Zest and Lemon Juice: For some added flavor.
  • Vegetable Shortening: You can use canola oil, as well
  • Eggs: Use large room temperature eggs. 
  • Vanilla Extract: Use pure vanilla extract, for the best flavor. 
  • Cranberries: Use fresh or frozen cranberries.

How To Cook Cranberry Muffins In The Air Fryer

Start by combing the flour, sugar, baking powder, nutmeg, cinnamon, baking soda, ginger, and salt in a large mixing bowl. Cut in the shortening and blend until crumbly. Mix in the water, lemon juice, orange zest, eggs, and vanilla. Beat well.

Air Fryer Cranberry Muffins

Mix well, then fold in the cranberries. Spray your muffin tins with non-stick cooking spray (see blog post for the one I recommend) Fill your muffin tins, about 2/3’s full. Set your air fryer to a temperature of 350 degrees F, and the time for 12 minutes. After 12 minutes, check to see if the muffins are cooked all the way through, using a toothpick. If not cooked, add an additional 5 minutes. Check again.

Be careful removing the muffin tin, as it will be hot. Let it slightly cool. Repeat with the batter, until you use all of the batter up.

What Muffin Tins Can You Use In The Air Fryer?

When I first started baking muffins in the air fryer, I could not find any pans that fit, so I used silicone muffin tins. While these work in an air fryer, they tend to not hold the shape of a muffin as well as metal pans. So, you often end up with muffins that look like ski slopes. That is because the air is moving around and sometimes knocks over the muffin tins.

I highly recommend investing in this tin, it will fit almost all of the air fryer oven models, and should fit most of the larger basket air fryers.

This is such an easy recipe. My kids absolutely love anything cranberry, so today I came up with these.

Ingredients
