I’m here to tell you about a delicious dish perfect for this time of year. Italian Wedding Soup combines an assortment of vegetables, pasta, and meatballs in a flavorful broth. It’s one of my favorite dishes because it’s so versatile- the recipes are almost endless!

Traditionally served at Italian weddings, this is a delicious soup. You can add many ingredients to suit your tastes or take out certain ones if they aren’t something you like. This soup comes together quickly and easily with only a few ingredients. And all of the ingredients can be found at your local grocery store!

If you’re looking for a hearty, comforting soup to warm up on those cold winter days (or even just as an excuse to eat tons of veggies), this Italian Wedding Soup recipe is perfect. It includes instructions not only for making your meatballs from scratch.

Remember the step-by-step directions below, as well as the nutritional information.

  • Ground Meat: Use ground beef, ground turkey, or ground chicken. A great way to make even more flavor for your Italian meatballs is using some Italian sausage in the homemade meatballs.
  • Italian Bread Crumbs
  • Parmesan Cheese
  • Egg
  • Chicken Broth or Chicken Stock
  • Ditalini Pasta
  • Frozen Spinach or Chopped Spinach
  • Seasonings and Spices: Kosher Salt, Black Pepper, Garlic Powder, and Italian Seasoning.

How To Make Italian Wedding Soup In Instant Pot

Step One: Prepare The Juicy Meatballs

Start by making the meat mixture in a large mixing bowl. Mix the meat, breadcrumbs, cheese, egg, and spices. Mix well. Then roll them out on a greased baking sheet (about one teaspoon). Pop into the freezer for about 10 minutes.

Step Two: Prepare The Flavorful Soup

Meanwhile, mix well with the chicken broth (stock), spinach, and pasta in the bottom of the pot. Then add the frozen meatballs. Add the lid to the Instant Pot, ensure the vent is sealed, set the pressure cook function, set high pressure, and set the cooking time for 4 minutes. Right before adding your lift, use a wooden spoon, to mix the bottom of the pot.

Step Three: Finish The Soup

Let the pressure naturally release when the time is up. When all of the pressure has been removed from the Instant Pot, open the lid (it should freely open, NEVER force a cover open). Mix well. Season with additional salt and pepper, and garnish with Parmesan cheese if you would like.

Meat: The perfect meatball recipe for any meal! Use beef, chicken, or turkey to make these tasty bites. You can also use diced Italian sausages if you wish. You can use turkey meatballs or chicken malls for this recipe.

Vegetables: You can add veggies like carrots, swiss chard, leafy greens, and green beans to the soup. Or you could use kale instead of spinach and endive for something with more flavor!

Pasta: You can substitute ditalini pasta for elbow macaroni, Israeli Couscous, or orzo.

Making the meatballs ahead of time

The Instant Pot is a time-saving kitchen appliance that can make any meal more delicious. With this recipe, you’ll be able to have dinner ready in less than 30 minutes with meatballs and an already-cooked soup!

I often make the meatballs ahead of time and freeze them. So, when I’m ready to make this sup, I am prepared to go. The meatballs will stay frozen for about 2 to 3 months. Just keep them in a freezer bag.

Small meatballs or mini meatballs make the best meatballs for the soup.

Reheating: Ladle the leftover soup into bowls, then place the bowl into the microwave and heat until warmed through.

Freezing Italian Wedding Soup

This is a great recipe that you can freeze for later. I love making a double batch, and freezing some when you are craving some Olive Garden Italian Wedding Soup, the copycat version!

Let the soup cool to room temperature and then place it into a freezer-safe container. Placed into the freezer the soup will last for 2 to 3 months. To thaw place the soup into the refrigerator overnight, and then reheat in a small saucepan, or in the microwave. Heat the soup until it’s warmed through.
