This is a great shortcut for anyone that likes Mexican food, it’s also a really simple thing to make for Cinco De Mayo or just a family reunion. I love to serve this when I have a large gathering, and it goes perfectly with any BBQ since it has the intense flavors, of BBQ.
This is one of the easiest recipes, and it’s the most versatile. I usually make a pot of this on a Sunday, and then add it to some dishes over the week. Some of the meals that you can use with the meat are tacos, taco bowls, enchiladas, salads, or my kid’s favorite sliders, and the possibilities are endless.
You need very few ingredients, but it backs such a powerful and delicious meal. It’s also a perfect meal for a new Instant Pot user.
Since I make all of my kid’s lunches (as they are homeschooled), this is a very quick and easy meal to make for them when lunch rolls around. Without making a huge mess of the kitchen, because I don’t want to spend my whole day cleaning up. And, since I’m always going to and from hockey practice, crew practice, robotics, music classes, etc. It’s also the perfect meal to already have cooked when I’m running in and out of the house. And, obviously, it’s so much cheaper than getting takeout.
Another good point, about this chicken, is that you can make it and freeze it, and then defrost it, and make taco bowls, enchiladas, sliders, and it goes great with soups. It also makes a great meal, if you prep freezer burritos with this, and free the entire burrito so that you can just pop it out of the freezer and microwave it. Talk about a time-saving strategy, recipe for that will be up soon, so keep your eyes open. for it.
Then put the chicken breasts in the Instant Pot Bowl.

Chicken, literally falls apart, amazing. Use it in other recipes, or eat plain over rice.
My kids are big Mexican eaters, so I made Quesadillas.

Pressure Cooker, Instant Pot, Easy Salsa Shredded Chicken
- 1 pound boneless, skinless chicken breast
- 1 cup salsa, any type
- salt and pepper to taste
Start by seasoning your chicken with salt and pepper.
Then place your chicken into the Instant Pot bowl,
Add the salsa over the chicken.
Press the Pressure Cook/Manual button, and the + or - button to select 20 minutes on high pressure.
When the timer beeps (mine beeps) turn the valve to venting and do a quick release. Then and only then, the silver pin is completely dropped, carefully open the lid, remove chicken, and shred with two forks, or the tool, I showed in my picture instructions.
Then add back the chicken to the sauce, and then use your chicken in burrito bowls, sliders, etc.
